Peanut Butter Cup Tarts

Ingredients & Directions 36 Reese’s peanut butter cups 1 lb Refrigerated cookie dough * – (Either fudge, sugar, or peanut butter dough) Refrigerate candies so paper will peel off easily. Unwrap each. Follow slicing instructions on cookie wrapper and quarter each slice. Place each piece in a greased miniature muffin cup. Place in preheated 350 oven for 8-10 minutes or just until cookie puffs and is barely done. Remove from oven and immediately push a candy cup into each cookie filled muffin cup. The cookie will deflate and form a tart shell around the peanut butter cup. The heat from the cookie will melt the chocolate toppings. Let the pan cool; then refrigerate until shine leaves the chocolate. Remove from the refrigerator and gently lift each tart from the cup with the tip of a knife. Makes 36 cookies. UUMMMHHH ! Injera (flat Bread)

Baker Bread Food Bakery Bake

Ingredients & Directions 4 c Self-rising flour 1 c Whole wheat flour 1 ts Baking powder 2 c Club soda Combine flours and baking powder in a bowl. Add club soda plus about 4 cups water. Mix into a smooth, fairly thin batter. Heat a large, non-stick skillet. When a drop of water bounces on the pan’s surface, dip enough batter from the bowl to cover the bottom of the skillet, and pour it in quickly, all at once. Swirl the pan so that the entire bottom is evenly coated, then set it back on the heat. When the moisture has evaporated and small holes appear on the surface, remove the injera. It should be cooked only on one side, and not too browned. If your first one is a little pasty and undercooked, you may need to cook a little longer or to make the next one thinner. But, as with French crepes, be careful not to cook them too long, or you’ll have a crisp bread that may be tasty but won’t fold around bits of stew. Stack the injera one on top of the other as you cook, covering with a clean cloth to prevent their drying out. Yields 8 servings

In a medium bowl, whip the egg yolks and 1 1/2 tablespoons of the sugar together until the sugar dissolves and the yolks are light in color and texture. In a separate bowl, whip the egg whites until foamy; then while continuing to whip, sprinkle in the remaining sugar and whip until soft peaks form. Fold the yolks into the chocolate mixture. Carefully fold the beaten whites into a chocolate mixture until well combined. Pour an even layer of the tart mixture over the bananas in the tart shell.
